When life gives you lemons...

Remember all those lemons we harvested this winter?

Some of them found new homes. Some of them were used in my own kitchen while still ripe.

But there were still a lot of lemons left over!

So... what to do with leftover lemons?

Um, LEMONADE, of course!

Well, lemonade slushies, to be precise.


This is the easiest thing in the world, y’all.

Instructions:

1. Juice lemons. Lots and lots of them.

2. Freeze lemon juice in ice cube trays. After it is all frozen up, dump the lemon ice chunks in freezer bags.

3. Forget about lemon ice chunks until summer arrives and the unbearable heat drives you to stick your head in the freezer and you subsequently rediscover said lemon ice chunks.

4. Chuck a bunch of lemon ice chunks in a blender with a bunch of sugar (or sugar sub). And water. Just... add however much you want. I did about 1 part lemon to 1 part water to 1 part sugar.

5. Enjoy the deliciousness.

So doing this! Not only does it look delicious and easy, but it's probably much healthier for an after-dinner treat than digging my hands into the cookie jar.

If you have a juicer I imagine it goes super fast (I don't so it didn't). It is just so easy and perfect for this muggy weather.
